Leadership and Operations Excellence

As a key leader, your day-to-day will involve overseeing seamless operations across our vibrant restaurant, bar, outlets and event spaces. You are the primary leader in the absence of the Director of Food & Beverage. You maintain a strong, visible presence on the floor during peak service periods.You’ll ensure that our service standards not only meet but exceed expectations, delivering an experience that's 'Exactly Like Nothing Else'.

Collaboration and Hotel Integration

You’ll be the linchpin that connects the culinary, sales, and event teams, ensuring that every group banquet and special event is nothing short of spectacular. Together with hotel leadership, you'll strive for total guest satisfaction, leaving a lasting impression that ensures they return.

Team Development and Culture

Lead a team that’s as dedicated to hospitality as you are. Recruit, train, and mentor front-of-house leadership and staff, fostering an environment of accountability and engagement that's aligned with our high standards of service excellence. Build a high-performing team focused on accountability, engagement, and service excellence. Conduct performance evaluations and provide ongoing feedback and development plans.

Quality, Compliance, and Standards

Maintain the highest standards of health, safety, and sanitation. Uphold our proud association with Marriott and Autograph Collection standards, ensuring every aspect of the operation runs like clockwork. Ensure compliance with alcohol service regulations. Implement cleanliness, organization, and operational consistency.

Qualifications

  • 3–6+ years of progressive food & beverage leadership experience, preferably in a hotel or upscale/lifestyle restaurant environment
  • Proven leadership ability with experience managing multiple outlets or complex operations
  • Strong financial acumen, including experience with P&L management, labor controls, and forecasting
  • Excellent interpersonal, communication, and problem-solving skills
  • Ability to lead in a fast-paced, high-touch guest environment
  • Flexible schedule, including evenings, weekends, and holidays

Preferred Qualifications

  • Experience in a boutique, lifestyle, or luxury hotel environment
  • Familiarity with Marriott systems and Autograph Collection standards
  • Strong beverage knowledge, including wine, spirits, and cocktail programs

Step into The Keep Kitchen & Liquor Bar and you’ll discover a chef-driven, modern brasserie with its own art deco cocktail bar. The atmosphere highlights the 1920’s ambience, while incorporating modern elements from the 21st century to give a contemporary vibe. 

The Keep was inspired by its location in the historic Leveque Tower, a 1927 structure that is known to be an art deco gem. The Keep’s cozy, inviting décor features gas lamps and rustic-refined furnishings, providing guests an invitation into a Roaring Twenties locale. It’s a comfortable, relaxed environment that suits casual dining as much as it does special occasions, parties, and business entertaining.

Utilizing local and regional ingredients, talented Chef Mark Grant refreshes beloved classic dishes by integrating a modern twist. Chef Grant adds a pinch of creativity and a dash of sophistication when preparing his exquisite plates. The restaurant’s open kitchen allows clientele to participate in interactive dining, while they have a chance to experience Chef Grant adding the final touches to his mouthwatering culinary creations.

Tucked away on the mezzanine level of the tower, The Keep applies the same imaginative renovation to its intimate lounge. Old-school cocktails embellished with flavourful house-made syrups and botanicals refresh any palate. The wine list features old and new-world vintages that flawlessly complement Chef Grant’s bold flavours.
