JOB SUMMARY: As an Abbey Resort associate, you will have the opportunity to be part of an incredible team at an all service resort situated on the beautiful shores of Geneva Lake. BASIC FUNCTION: You will lead the kitchen, develop menus, oversee all food production, culinary activities and steward areas. Ensure the consistent delivery of the highest quality food, service and systems.

QUALIFICATIONS: EDUCATION, KNOWLEDGE, TRAINING, & WORK EXPERIENCE

•Culinary graduate with ten years of previous Chef experience

•Ability to make quick decisions in high stress situations

•Excellent customer service skills

•Pleasant and positive personality

•Well organized

ESSENTIAL FUNCTIONS:

•Work closely with Director of Food and Beverage

•Oversee resort culinary operations

•Schedule, train and manage kitchen staff. 

•Prepare and cost menus for restaurants, banquets, special events, and functions.

•Skilled in all aspects of food product selection, handling and preparation, as well as advanced cooking techniques.

•Ensure that all dishes are prepared and presented in accordance with standard recipes and plate presentations.

•P&L accountability, specifically in terms of labor cost and food cost.

•Maintain a safe, clean and sanitary environment in compliance with all local and state health codes.

•Maintain food cost within budgeted guidelines.

•Ensure that the quality and quantity guidelines for all foods are met.

•Ensure that food purchasing and requisitioning procedures are followed.

•Monitor food specifications through the Purchasing Agent.

•Prepare daily, weekly, and monthly payroll reports.

•Assist in the preparation of the annual food budget.

MARGINAL FUNCTIONS:

•Effectively interact with people of diverse socioeconomic, cultural, disability, and ethnic backgrounds

•Required to perform other tasks and duties as assigned

•Scheduled hours may vary on business needs and may or may not include holidays, weekends, various shifts, overtime or reduced hours

ENVIRONMENT: Indoors, dimly lit, carpeted, climate-controlled environment. Hard kitchen floors with occasional slippery or greasy areas. Handling hot china and silver. Outdoors, cement surfaces, with exposure to outdoor climate and elements.
